Crispy, golden wontons filled with seasoned pork, cabbage, and egg, seared to perfection on the griddle and steamed for a tender finish. Served with a tangy-sweet chili dipping sauce, they’re an irresistible appetizer or snack.

Ingredients
For the Wontons
• 1 lb ground pork
• Wonton wrappers
• 1 tsp ground ginger
• 1 tsp garlic powder
• Kosher salt (to taste)
• 2 tbsp light soy sauce
• 1 cup cabbage slaw
• 2 large eggs
• 2 tbsp ponzu sauce
• Green onion (chopped, for garnish)
• Sesame seeds (optional, for garnish)
• Olive oil (for cooking)
For the Dipping Sauce
• 3 tbsp rice vinegar
• 1 tbsp light soy sauce
• 1 tbsp ponzu sauce
• 1 tsp sesame oil
• 2 tbsp Thai chili sauce
Preparation
Step 1 - Preheat and Cook the Pork
Preheat your Blackstone Griddle to medium-high heat. Once hot, add the ground pork and season with ground ginger, garlic powder, kosher salt, and soy sauce. Cook until the pork is fully browned.
Step 2 - Add the Eggs and Cabbage
Crack two large eggs next to the pork, lightly scramble them, and mix them into the pork. Once the pork is cooked through, add the cabbage slaw and season with ponzu sauce. Toss well and transfer the mixture to a mixing bowl.
Step 3 - Assemble the Wontons
Prepare a small bowl of water and your wonton wrappers. Spoon a small portion of the pork mixture into the center of a wonton wrapper. Dip your finger in water and lightly coat the edges of the wrapper. Fold the wrapper in half to form a triangle, pressing to seal the edges tightly. Bring the left and right corners together, pinching them to create a classic wonton shape. Repeat until all the mixture is used.
Step 4 - Cook the Wontons
Clean the griddle and apply a light layer of olive oil. Place the wontons flat on the griddle and cover them with a dome. Cook until one side is golden and crispy. Flip the wontons and cook the other side until lightly golden. Add a splash of water to the griddle to steam the wontons. Cover again with the dome for 1-2 minutes to ensure the wrappers are fully cooked. Remove and drain on a paper towel.
Step 5 - Prepare the Dipping Sauce
In a small bowl, mix rice vinegar, soy sauce, ponzu, sesame oil, and Thai chili sauce. Set aside for serving.
Step 6 - Plate and Serve
Spread a thin layer of Thai chili sauce on a serving plate. Arrange the cooked wontons neatly on the plate. Garnish with chopped green onions and sesame seeds, and serve with the prepared dipping sauce on the side.
