Homemade Pimento Cheese

  • 2 green tomatoes

  • 1 cup flour 

  • 2 tsp Blackstone Parmesan ranch

  • 2 eggs

  • 1 cup Italian seasoned breadcrumbs

  • ¼ c pecorino Romano cheese, hand grated

  • Duck fat

  • extra light tasting olive oil

  • Sea salt


Pimento Cheese

  • 16 oz cheddar cheese, hand grated

  • 8 oz cream cheese, softened

  • 1-2 garlic cloves, fresh grated 

  • 4 oz pimentos, drained

  • 2 heaping tablespoons Dukes Mayonnaise 

  • Blackstone Parmesan Ranch

Preparation

Step 1 - Mix all pimento cheese ingredients together. Cover and place in refrigerator until ready to use.

Step 2 - Slice tomatoes and set aside. Set up dredging station using three separate shallow dishes or bowls. Adding flour in one, season with Blackstone Parmesan ranch. Add eggs in second bowl and whisk. Add seasoned breadcrumbs and cheese into the third. 

Step 3 - Coat one slice of tomato at a time into the flour shaking excess off. Then into the egg wash, then into the breadcrumbs until all tomatoes are coated. 

Step 4 - On medium low heat drizzle a small amount of oil and Duck fat onto the Blackstone and place tomatoes on to shallow fry low and slow until golden brown, about 3-4 minutes. Flip tomatoes and drizzle more oil and or Duck fat under each tomato as needed to fry other side until golden brown.

Step 5 - Remove tomatoes when cooked and place on paper towels to drain immediately seasoning with sea salt. 


Step 6 - Serve tomatoes immediately with a scoop of pimento cheese on top & enjoy!
